So, I’ve been messing around with flank steak lately, and let me tell you, it’s been a journey. This cut of beef is pretty lean, which means you gotta be careful not to overcook it, or it turns into shoe leather. But when you get it right, it’s juicy and flavorful.
First, I tried making some tacos. I marinated the flank steak in a mix of lime juice, chili powder, and cumin for a few hours. That marinade really did wonders, adding a ton of flavor. Then, I grilled the steak to medium-rare and sliced it thin. Served it up in some warm tortillas with all the usual taco fixings – it was a hit!
- Marinate: Lime juice, chili powder, cumin – let it soak for at least a couple of hours.
- Grill: Get that grill nice and hot, cook it to medium-rare.
- Slice: Thinly slice against the grain for maximum tenderness.
- Assemble: Warm tortillas, your favorite toppings, and enjoy!
Potatoes, Potatoes, Potatoes
Next up, I wanted to find the perfect side dish. I’ve always been a fan of potatoes with steak, and I wanted to try something new.
Hasselback potatoes caught my eye. You basically slice the potatoes thinly most of the way through, then brush them with butter and herbs and bake them. They looked super fancy, so I gave them a shot. It took a bit of extra time to slice them all up, but man, were they good! Crispy on the outside, fluffy on the inside.
- Prep: Thinly slice the potatoes without cutting all the way through.
- Season: Brush with melted butter, herbs, and whatever else you like.
- Bake: Until they’re golden brown and cooked through.
Simple Sides are Great Too
Of course, I also tried some simpler sides. Roasted potatoes are always a good choice – just toss some cubed potatoes with olive oil, salt, pepper, and maybe some rosemary, then roast them in the oven until they’re crispy. Super easy and always delicious. And a simple green salad is great for cutting through the richness of the steak.
One time, I even made some sweet potato fries. They were pretty good, but I think regular potato sides are a better match for flank steak.
I’m still experimenting, but so far, I’m loving flank steak with either tacos or a potato side dish! Maybe I will try a green salad next time.
